My wife and I took a private cooking class with Curtiss at his cooking school on our honeymoon in summer 2020. Curtiss is a consummate professional at all things food and hospitality. He was sensitive but sensible about Covid-19 contagion risks in his spacious kitchen, including providing masks and sanitizer bottles for us. We socially distanced while preparing a four-course dinner then eating it together. Since then, I've repeatedly said to my wife that it was squarely one of the top five meals I've eaten. Curtiss created the menu, coached us through the preparation, and sat and ate with us. Through all this, he proved himself a font of knowledge, and interesting. He's a skilled teacher as well as cook, food writer, and photographer, not to mention his many interests in foraging, hunting, fishing, food chemistry, etc. His home, custom-built cooking school, and farm are all beautiful in their own right, and well worth the visit.

A truly exceptional experience taught by a gifted and passionate individual, Chef Curtiss Hemm is able to have fun and instruct at the same time. Wife Kristen and I recently attended a Sunday session, "Steakhouse Classics", and had a blast with our fellow students. We'll soon be returning for "Foods of the French Countryside" (wine IS allowed, as it probably should be for a session such as this :) as well as "A Passage to India". Having lived for so long in the Lake Champlain area, we've always been surprised that a cooking school like this hasn't been available before. Curtiss takes great pains to recommend and bring to his demonstration table farm-fresh and local ingredients - something we love hearing about and tasting. Please avail yourselves of a wonderful afternoon or evening, and take the opportunity to meet this talented individual!
