Fantastic food experience and quite a nice decor with different types of seating from toler bar type tables to cafe style tables and then Long rows of couches. The food was really good, we came for the buffet and it was a little bit different as everything had to be served by the staff rather than pick your own. But we were really impressed with all the food, the pork crackling was crisp and cooked perfectly. The vegetables were great. the fish was nice and soft and surprisingly you not overcooked. I don't know what most of those things were called but it's definitely worth a try. They cooked chicken breast and it was soft and tender. Amazing!

Stayed at the hotel over the long Easter Weekend and had the chance to dine here a few times for these experiences: 1. Seafood Table Dinner 79pp - 3 tiers of assorted cold seafood, salad, meat & cheese entree. Comes with oysters, cooked king prawns & 1 crab, plenty to share. - 2 mains. Lamb Shank & Salmon were on the menu that night. The lamb shank was divine! - Dessert Platter (Easter themed). We struggled to finish the mains & our lovely staff offered to send the dessert up to our room. Although it took a while for it to arrive. - Pleasantly surprised to receive free flowing bubbles for the whole duration of our dinner because we thought that’s only available for lunch (lunch price is 95pp) 2. Breakfast Buffet - opted in with room booking At the time of booking, we’re informed that breakfast was still table service due to covid. The morning we went down, it was back to buffet after the govt lifted covid restrictions before Easter weekend. They served typical western breakfast: eggs, bacon, mini sausages, baked beans, mushrooms, bread & pastries, cereal, fresh fruits, yoghurt & muesli, juices & coffee, even a gluten free corner. Although it was really busy, we got a table promptly on arrival. Dishes are regularly topped up & tasted good. It’s not as extensive as other buffet breakfast we’ve been to, but it covers the standards well.

The food is awesome. Very generous portions to make me feel very full and I can eat alot I enjoyed every part of the courses the only let down was the crab, it was nice but I had better. The waitress is super friendly and lovely, she was amazing ️

We stayed at the hotel over the Easter weekend, and after a day's long drive to get into Sydney, we didn't want to venture out of the hotel to find somewhere to eat (especially to try find somewhere open on Good Friday)... Well, I am so glad that we came here! We ordered the seafood towers (X2) and between the 4 of us we all agree it was some of the best value seafood experience that we have had in a long time. Servings were very generous, seafood was delicious and everything in between was excellent. The servers were also incredibly accommodating and friendly. I highly recommend this dining experience to anyone! Whether you are staying at the Hyatt or not - what an incredible night. Rohit was also very attentive and explained every cuisine in detail. Thank you for having us!

Fabulous lunch, more than enough food for 2. Staff are so friendly, professional and nothing is too much trouble. Cannot rate this highly enough. Wonderful.

130 for two seafood signature weekend deal: Seafood signature was good with plenty of shrimps but attention to detail is needed (shrimps' backs had black thread lines...). Would love to see more oysters and tastier crabs (bland). The two main courses were great but the lamb shank was a bit salty for us. Portion is wonderful! Would come back if there are improvements.

The shame is, Sailmakers could be mind blowing. In every way it's lovely but that final zing is missing. High tea was nice, I do seriously wonder how much of it was the previous night's leftovers, reheated.

Went for lunch and was greeted with some of the best service I've ever experienced in a restaurant before from Julie. She made us feel right at home and took care of us completely. The food was delicious, the seafood tasted fresh and the desserts as pictured were divine (cheesecake was my fave). Highly recommend and can't wait until the buffet is back in operation!!
