THIS is a “routier.” There is a similar tradition in the USA, of a diner that caters to long-haul truck drivers and others who are making long drives or just want some good, wholesome food. This place delivers avec forte! Being that it is in the Pas de Calais, you have to want to go there, or at least make sure it’s on your way. The menu varies from week to week, so some flexibility is called for, but there’s usually a tagine that will feed the soul.
