I visited Cahill Bistro today for the first time – and am I ever glad to have discovered this Latin American gem. From my initial experience, and talking to patrons as well as the owners, I am not surprised at all to already find 395 highly favorable Google reviews! I met Cristian, Alberto and Carlos Pinos, the owners of Cahill Bistro, and so enjoyed speaking with them. Their passion and love to make everything from scratch with fresh ingredients is delightful. The space is clean, inviting, and they tastefully did the interior décor themselves with skills of other family members. A table of four men was eager to tell me that they come faithfully – every week! For dinner as well as lunch! What stands out the most is their home-style flare for cooking. I now have it planned to return someday for an evening meal and try for myself the tasty chicken drums and salads with the in-house avocado dressing I saw this table enjoying. I ordered the Ceviche with lobster, tomatoes, the right amount of cilantro (which I love), onions and a great broth. What is equally surprising is how good the homemade corn chips are that accompanied it. They recommended that I try their tomatillos soup, which I took home and can now report that it is exceptional. The extremely friendly, professional, and appreciative staff was also personable. The three brothers spoke of learning how to prepare food from their mother and how grateful they are to her for passing on her love for great flavors and hospitality. Rarely am on this impressed with an initial experience tasting a new cuisine. I took note that they have a weekend brunch with beer, sangria & margaritas, too. I might say that I nearly missed this experience because I’d never looked around the back (on the right) of this strip mall. You don’t want to miss it!!!

Kind staff and just amazing polish food. Get some stuff to go that you can freeze for later like their homemade kielbasa and pierogi's. Get a hot plate to eat there. Get some blintzes for dessert. Just get everything!

I love this place. The food is excellent. The family that runs it are some of the warmest and most welcoming folks I've met in the metro area. You'll find multiple generations of the family helping out on any given day. They came here from Ecuador and worked for decades at positions in other restaurants until they could manage to open their own place.

Delicious food and excellent service in a very neighborhood atmosphere. Owner Carlos is a very friendly guy who attends every guest personally. Had a Spanish wine, which was over the top. Went there for mother's day dinner, they gave a rose to every guest who is a mother. What a thoughtful idea.
