Emilio, the king of the traditional balsamico is the perfect guy to explain you about it. Patient, funny and amazingly smart guy. The place is pretty and has a family atmosphere, but above all- the balsamic vinegar is one of the best. Don't miss this place!

After a few quick emails, we were set on meeting Irene at her family's lovely villa, where they grow their grapes and make traditional balsamic vinegar. She was very passionate and thorough about explaining the process, down to how the packaging was uniquely designed. We were able to taste several vinegars of various ages. Love the vibe! Please visit Antica Acetaia Villa Bianca and take a balsamic vinegar tour if you ever visit Modena!

In de zomer van 2020 stuitten we op deze uitzonderlijk mooie locatie, in het hart van Italië net buiten de stad Modena. De communicatie om een afspraak te maken voor een rondleiding verliep heel soepel. Per toeval viel onze rondleiding samen met de dag waarop het hele proces van Balsamico maken te zien was! We mochten aanschouwen hoe de oogst werd binnengehaald, geperst en gekookt, wat een verrukkelijke geuren! De gastvrouw is heel hartelijk en vriendelijk en leidde ons rond het gebouw, de wijngaard en de zolderopslag. Het huis gebouwd in 1600 is al 6 generaties lang in de familie. De zolder, zeer belangrijk voor een Acetaia, is met zijn 400 jaar oude houten balken nog origineel. Het geeft een sfeervol geheel en uitstraling van ambacht. We hebben mogen zien, proeven, voelen en beleven wat dit ambachtelijke product zo speciaal maakt! Een aanrader voor elke bezoeker van deze streek!
